A healthy twist on a Green Goddess dressing. Adjust the amount of serrano chile according to your tastes as well as the heat of the chile itself…
1/2 cup plain yogurt
juice of one lime
about 1/4 cup cooked tomatillos (2-3, boiled til soft)
1/4 cup chopped cilantro, divided
1 serrano chile, seeds and ribs scraped out* add one half only to start
a sprig or two of parsley, chopped finely
a small handful of mint leaves, chopped finely
salt to taste
Place all ingredients, leaving out about half the cilantro, the parsley and the mint, in a blender jar (start with 1/2 the serrano chile if you aren’t sure about the heat) and blend until smooth. At the end, add the reserved herbs and turn the blender on and off quickly, just to stir them in.
Serve with a variety of fresh, blanched and roasted vegetables. Also a great sauce for fish or chicken, or as a sandwich spread.
