Vanilla & Honey Guava Soda


I haven’t been a big fan of guavas, but since I learned recently that only 2 guavas will set you up with 300% of the recommended daily dose of vitamin C, I thought I would work on consuming more. So I came up with this refreshing drink recipe:

1 lb guavas, washed and cut in halves or quarters

2 cups water

1/2 cup of honey or sugar or a mix of the two. I used 1/4 cup mesquite honey

1 vanilla bean, split lengthwise and scraped.

Place the  sweetener(s), the vanilla bean along with the contents, and 1/2 cup of water in a heavy pot over medium heat. Bring to low simmer for 5 min. Cool.

Remove the bean itself from the water and combine this with the guavas and the remaining 1 1/2cup water in a blender.

Pour through a sieve to strain out seeds (if desired)

Fill a glass about halfway with the guava blend (it will be thick) and top with your favorite sparkling water and a squeeze of lime. Even more Vitamin C– Yay!
